This popular fusion restaurant is a relatively new addition to Amsterdam's eateries, having opened in 1998. Just to prove its commitment to the fusion principle, even the interior is a mishmash of new and old, blended together nicely to create a memorable dining experience. The menu combines Eastern and Western influences to good effect and this restaurant is billed as Demi-veg, which indicates a concentration on fish and vegetarian dishes. Add to this a nice wine list, and the final result is a restaurant well worth visiting. Fusion isn't for everybody, but you'll never know unless you try it.

Located on an Old City Center street, Altmann features a large dining arena and a cozy, comfortable bar separated by a colossal curtain. The Bamboeseur is a small, cosy bar-bodega offering the normal range of drinks, snacks and lunches. Evenings, the mezzanine is turned into a small restaurant with a limited European menu of daily vegetarian and non-vegetarion specials. The clientele is mainly under average of age, the CD-player often produces rather loud modern music, the ambiance is mainly jovial and merry. The service at the 10-stool bar is mostly female, friendly and correct. And yes there is Heineken on draught.

The exterior has not been changed since this custom-house was built in 1901. Inside the ambiance is also being helped by the very high original steel rafters. At the 10-stool bar one is served by friendly people of both sexes, who also serve luncheon and dinner in this roomy place with a glazed veranda, a small raised platform where live music is played at times and a storey-high mezzanine perfectly fit for more private parties, or a rendezvous dinner with an old or new love. Every month a new special beer is introduced, Flemish or Dutch, sometimes from the IJ-brewery nearby. For lunch there are sandwiches and rolls, soup of the day. A blackboard shows the specials of the day. The à la carte menu has a broad choice of first courses, meat and fish dishes, vegetarian food and desserts.

This Grand Cafe on the Spui is a real landmark. Always busy and very trendy. The kitchen has quite an international feel to it and while it can be a bit pricey, the food is good quality. A decent selection of wines and beers are on offer. A favourite of the dreaded Young Urban Professional, you might think this is not for you but you would be wrong. Luxembourg is a great cafe, the lovely conservatory makes for a great place to hang out and the overall style of the interior is great. It can get very busy, but it is so conveniently located and famous that you really do not have an excuse not to pop in.

At this popular local restaurant, guests enjoy a traditional French/Belgian meal in one of the nicest historical industrial buildings in Netherlands. The building was once a water pumping station and the wonderful but simple atmosphere is enhanced by 22 original floodlights from the old Ajax and Olympic stadiums, both legendary soccer stadiums. The food is straightforward but very good, whilst prices remain relatively low. Salads, oysters, fish, soups and steaks all feature on the menu. The wine list comprises a thoughtfully selected cluster of (mostly French) wines. As this is a popular dining spot, it is advisable to reserve a table.

Hidden behind an inconspicuous entrance next to the Golden Tulip Schiller Hotel, one hardly sees the Schiller bar amongst the many pubs on Amsterdams largest amusement area. The guests are mainly insiders and regulars enjoying their drinks and and the products of a good simple kitchen. The clientele is predominantly, but not exclusively, well-educated. There is quiet music from the CD-player and a conversation is always possible and easily started at the 10-stool bar.

Calling it a cafe really doesn't do justice to Cafe American—this is not only the oldest Grand Cafe in the Netherlands, but both the building and its interior are listed monuments and it's easy to see why. The interior is impressive, to say the least, with beautiful stained glass windows, huge murals and quite stunning chandeliers. An antique reading table is also present, well-stocked with the latest newspapers and magazines. In true American style, the cafe has a separate non-smoking area, and to top it off, there is a large terrace that gives a good view of the Leidseplein. This place is definitely one to visit.

A very old and queer place is the restaurant Eik en Linde. It's a typical Dutch 'brown' bar and its history dates back to 1858. It has photos and murals on the walls, which tell you various stories and take you back to the past. Food is quite nice and filling, and rest assured, it's easy on your pocket. The staff can be of help if you need them. When it's time to leave, try to look at your own watch as the clock behind can be very confusing, it runs backwards!

The Dantzig cafe-restaurant is within walking distance of the Rembrandtplein and Theater Carré. During the daytime it looks like a Parisian Grand Café where people walk in and out all the time. At night it serves as a very nice restaurant with an informal atmosphere. A classical theatre-like interior with some modern accents lurks within this cafe-restaurant, whilst outside Dantzig owns probably one of the largest terraces of Amsterdam. Sitting on this sometimes very busy terrace you have a wonderful view of the river Amstel without any traffic to bother you. The service is quick and the staff always smiling. The menu changes each month. On this menu you can find bread, salads and tasty daily dishes at low prices. If you would like to have dinner here, you will have to reserve a table in advance.

The restaurant has a very typical essence of the East - from its cane furniture, high windows, yellowish walls to huge elephants painted behind the bar. It's a very chirpy and comfortable place as lots of light flows right through the windows. Food is palatable but not really the best you would find in the region and the staff is pretty affable and helpful. It has an outdoor seating arrangement with a pretty view but during the winter it is quite impossible to sit outside. The crowd that pours in is a mix of tourists, students and locals, especially those who visit the nearby museum.

Located on Leidesplein, this Grand Café is everything you would expect from a Grand Café: it's big, it's beautiful, it's expensive and people come here to be seen, especially on weekends. This restaurant may not be everybody's cup of tea, but you'll probably want to have a look around anyway. Depending on the type of person you are, you'll either flee, running for the hills (not easy in Holland!) or blend in with the crowd and refuse to go anywhere else for the rest of the day. The terrace is a nice place to spend a sunny afternoon and there are plenty of sheltered spots inside where you can hang out and enjoy a bit of privacy.

Chef/owner Hein Jansen prepares everything herself in the small open kitchen, which customers must walk through to get to the seating area. There is a diverse set menu as well as daily specials. Thick Turkish yogurt with honey, crepes stuffed with chicken, quiche lorraine and fresh lentil salad are all worth trying, but the french toast is the real gem at this joint - pure homemade deliciousness! This is quite a large bar, located near Dam Square. It is close to a part of the University and is frequented by students. Schuim translates as "foam", which is probably an indication of their most commonly served drink: beer. Het Schuim is a bit more than your usual student hangout. It gets quite a creative crowd, especially in the evening when the age of the clientèle rises. It looks the part, with that typical "thrown together" interior that seems to be the norm for every trendy bar at the moment. The pictures on the wall, which is used as an art gallery, are changed regularly. Het Schuim will serve about six draught beers and somewhere around 15 bottled beers at any given time. There is almost always one beer that is heavy enough to knock out a small elephant.

The Dutch pannekoek is a more exotic variety of a pancake; more thinner and larger, and definitely more tastier. One of the best places in Amsterdam to savor it is Meneer Pannekoek Café. This Pannekoekenhuis (pancake house) is located conveniently behind the dam and thus is almost always packed. Cosy interiors with Hollywood actors in black and white watch over your table, as the leisurely-moving waiters serve hot and fresh pannekoeks. Some of their specials include the delicious smoked salmon and mixed nuts coconut amaretto whipped cream treat. They also serve sandwiches, quiche, soups, omelets, salads and even steak, beef sirloin, hamburger, chicken pasta, hotchpotch or grilled salmon. The cafe is also one of the rare Dutch restaurants to have a non-smoking area.

This trendy little restaurant's motto is 'lunch all day, dinner after 6p' and their image is style, style and some more style on the side. The interior is very minimalist and you get the feeling that some of the clientele is probably here because it's trendy and not for the food. Not to worry though, because you can get a good light meal here and the prices are actually more reasonable than you would expect. Seeing they mainly serve light dishes, this isn't the place to go for a big, festive meal, but at least New Deli tries to do something different and succeeds in making the act of going for lunch a trendy, hip activity.

Live music and DJs take turns to set the mood for the patrons. No relation to Aristotle though!

This restaurant is located on the Zeedijk. Palmer is definitely one of the better-looking of the many restaurants in the area. It also has a very trendy menu that changes every two months or so. What exactly is a trendy menu? In this case, the cuisine is called 'fusion', and house specialities include such dishes as Freestylers Revenge, Renegade Taste Wave and The G-spot Dish. Apparently, Palmers is an ode to a certain John Palmers, a restaurateur responsible for starting a chain of restaurants in America that are all about good food, friendly service and positive attitude. Most importantly, the food here is good, and like most fusion restaurants there are some more than interesting combinations on the menu. You could just opt for a steak, but most of the dishes are slightly more adventurous with a mix of influences. Palmers is split in two sections: the cafe and the restaurant. The restaurant offers a slightly calmer setting while the cafe is open slightly longer and you can get a drink here. But both of them offer the same menu.

Having thrown open its doors to the public in early 2000, this relatively new eatery is a welcome addition to the Plantation / Annex Museum of The Resistance (WWII) in the beautifully renovated old Plancius building opposite Artis zoo. Its dual nature caters to all, for it is a pub during the day and a restaurant after 6p. A tad pretentious for the menu, this spot mainly attracts young professionals and well-to-do pensioners who appreciate the value of a good kitchen. An excellent service leaves no room for complaint.

Although De Ponteur is mentioned only as a restaurant in the local phonebook, the roomy front part is also a very pleasant pub before dinnertime. An especially nice feature here is the reading table with an excellent choice of newspapers and magazines; all through the day it attracts many people with some time to spare or who want to rest their legs after a couple of hours shopping on the busy Javastraat or the Dappermarket nearby. The kitchen is very good, by the way, and mainly offers dishes from the European continent with French overtones.

De Reiger is mentioned in the Yellow Pages as a restaurant, but to many, it is just a regular pub before six o'clock. This certainly holds true for the long bar in the front, where dining is hardly possible anyway. During the day the clients are mainly the younger import-Jordanese from the neighborhood. The kitchen is good and offers, in addition to the soup and the dish-of-the-day, a tasty three-course dinner: Meat, fish or vegetarian. Amstel is offered on draught; various bottled beers are also served.

This restaurant is located in the Jordan area, which is filled to the brim with those famous Amsterdam canals and, if the weather permits it, you can enjoy your meal on the terrace overlooking two, yes, count them, two canals. You can have a nice drink at the bar before you sit down for your meal amdist the lovely Art Nouveau decor that is prevalent in Belhamel. This is one for people who like something different. The cuisine is French/Italian orientated but you can even go for some Dutch cuisine. The main dishes are quite special and include some game and fish dishes. You're best making reservations because this restaurant is understandably popular among locals for its intimate feel.

The glass walls enable your eyes to feast on beautiful views of the greenery outside, as you enjoy your four-course lunch. Come by for a romantic evening, to dine on a five course meal under the starry sky. The menu changes daily and the wine list weekly. The restaurant is divided into various sections— the restaurant for one, then there is the Bar Table, Business Table, Patio, Garden Room and not to forget the Chef's Table, where you are left to the mercy of the staff in the kitchen. What's more most of the ingredients used here are organic and are purchased from local farmers or handgrown by them at Purmer polder.

A bit hidden behind the Americain Hotel, De Smoeshaan (The Talkative Cock) is a typical hangout for actors and actresses of stage, film and television when they are next door at the small Bellevue Theater. The interior is rather 'brown' and the furniture is old and comfortable. Next to the pub, where a variety of small snacks is served, there is a full-fledged restaurant upstairs with a reasonably priced menu with some good a la carte dishes. Amstel is offered on draught, and many brands of bottled beers are served.

The translation of Struisvogel is ostrich and it comes as no surprise that ostrich is this small, intimate restaurant's specialty. It serves a three-course menu that changes every month. Don't be afraid, if you don't feel like eating a bird that can grow bigger than you, you can always choose from a selection of other lovely dishes. It's all just very cozy and friendly, the owners can only seat about 35 people so you'll have to reserve to make sure you get a table. To show that they take their name seriously, they top off their menu by serving something called ostrich beer-bless them and their ostrich-loving tendencies.
