This Amsterdam eatery sets new trends in the art of cooking and presenting food. Right from ideating recipes to presenting it in a plate and creating the right kind of atmosphere, each detail is carefully looked after. 'Food Designing' as Chef Marije Vogelzang puts it is an art that involves the various stages from selecting the right ingredients to presenting a visual treat before it can be savored. Of course Chef Vogelzang's a master and you will be pleasantly surprised as each bite melts in your mouth. Proef is only available by appointment and on weekends in summer.

The glass walls enable your eyes to feast on beautiful views of the greenery outside, as you enjoy your four-course lunch. Come by for a romantic evening, to dine on a five course meal under the starry sky. The menu changes daily and the wine list weekly. The restaurant is divided into various sections— the restaurant for one, then there is the Bar Table, Business Table, Patio, Garden Room and not to forget the Chef's Table, where you are left to the mercy of the staff in the kitchen. What's more most of the ingredients used here are organic and are purchased from local farmers or handgrown by them at Purmer polder.

The endeavor is to support 'fair trade' and hence the native producers are the main source of the freshest of ingredients. The Alaska Salmon and Hastings Dover sole have been marked by The Marine Stewardship Council with their blue eco-labels. It's to recognize that Umoja serves sustainable seafood. You can order the desired quantity of the lip smacking fare that is offered here, from the vegetarian dishes to fish, meat, cheeses and desserts. The menu varies everyday and there's always something exciting to look forward to besides the rocking music by Djs.
