Drawing inspiration from the album, this restaurant uses organic produce that is locally available. The endeavor is to support 'fair trade' and hence the native producers are the main source of the freshest of ingredients. The Alaska Salmon and Hastings Dover sole have been marked by The Marine Stewardship Council with their blue eco-labels. It's to recognize that Umoja serves sustainable seafood. You can order the desired quantity of the lip smacking fare that is offered here, from the vegetarian dishes to fish, meat, cheeses and desserts.
