Rich Basque history informs the menu of this restaurant, earning it a mention in both the Michelin Guide and La Guía Campsa. The fresh ingredients used in the dishes are brought directly from nearby Navarra (Nafarroa) and the other traditionally Basque regions. Many of the dishes are cooked using methods that have stood the test of time, though the menu changes occasionally to allow the chefs to experiment with fresh, seasonal produce. The roasts are prepared in a wood-fired oven, and the homemade desserts are irresistible.
