Aumthong Thai has been established for some years and can be spotted by its eye catching bright blue exterior. Try mixed seafood, deep fried in batter with sweet chilli sauce for a real treat. Starters vary in price and begin at around £3.95 with main dishes ranging from £5-£20. These include seafood, meat dishes, noodles and curries. End your meal with one of the tempting desserts... that is if you have room left for one.

This restaurant is situated right on the beach next to The "Doughnut". It has a wonderful decked dining area outside—a perfect place to sip coffee to the sound of the waves washing over the pebbles. Open all day for drinks or food, The Boardwalk has a range of cocktails, shakes and alcoholic drinks. The menu is tempting, featuring Moules Marinieres and home made burgers along with organic meat dishes, salads and a good old English breakfast. The prices are reasonable and the location makes it hard to top.

Set at the edge of a quaint square in The Lanes, this could well be a contender for the best Brighton restaurant. If a full blown gourmet meal is not your preferred choice, the small but stylish oyster bar, annexed to the restaurant, has space at the counter for about six diners. The menu is rather traditional with Dover sole, Grilled Tuna and lobster high on the list. The quality is excellent and the service attentive, making the whole dining experience a real joy.

In total contrast to the lively Fitz's bar downstairs, this restaurant is relaxed and sedate with top London chef, Leighton Jones, creating a predominantly fish menu using only the finest and freshest of locally caught ingredients. Main courses start at reasonable rates and the piece de resistance is the Seafood Platter for two includes a whole dressed lobster, crab claws and oysters amongst other fishy offerings. The restaurant is opposite the Theatre Royal and next door to The Dome, which makes it perfect for a pre or post theatre meal. The restaurant is closed on Sundays and Mondays.

It is a popular choice for local people and highly rated, so booking would be advisable. Starters such as Andalouse of baby aubergine caviar with olive salsa are all tempting. Fruit de Mer is a compact seafood restaurant tucked away in a side street off the Western Road in Hove. The interior is small and smart with wooden floors and glass topped tables. Sit outside on a warm afternoon and take in the sea air. The order of the day (or evening) has to be seafood. A two course and an evening meal is available. The latter includes dishes such as smoked mackerel pate and pitta bread for starter and Thai style oven black bream to follow.

Well known for serving local and visiting thespians, including Joan Collins and Joanna Lumley, the restaurant is situated in a basement building and operates a kind of one way system for entry and exit. Masks hanging in a window will direct one to the right location. All food is home-made and available in a menu made up of five "Acts". Local grilled rainbow trout is well worth a try. To end a perfect dining experience, indulge yourself with a luscious dessert.

Situated across the road from the West Pier, The Regency is a busy place from morning until night and is a favourite haunt of all sorts of locals—celebrities included. The menu includes very good value meals served in pleasant, but basic, surroundings with or without a sea view. The menu is varied, but fish is the main food here. Main meals range from GBP6.95 to GBP16.95. The fish is simply cooked to preserve its natural flavour, and the service is quick! The seafood platters are especially good.

Located just down the road from Brighton train station, Tamarind Tree Cafe is Brighton's only Caribbean restaurant. It is quite a small place, but the layout and lighting makes it feel spacious and comfortable. Background music tends to be tuneful roots reggae, at just the right level. Cuisine is authentic Caribbean and Jamaican using the finest traditional ingredients. Their vegetarian and vegan dishes - Jamaican fruits and veg along with beautiful sauces - are all quite special. A selection of good fruit and vegetable juices as well as tea and coffee is available. If you bring your own wine (they don't serve alcohol) there is a corkage charge.

Preston Street is packed with all kinds of different restaurants to suit most tastes. About half way along one finds Tsing Tao, a spacious modern eatery complete with crisp white tablecloths and wooden floors. Food is reasonably priced. Choose from chicken, sea food, duck, beef, sizzlers, pork, noodles or rice. Set meals (meat based or veggie) are very good value. Dim sum is served daily from noon-6p.
