Pascal Silman, the chef in charge of this gourmet restaurant at the Conrad International Brussels, has polished his art in some of France's best Michelin-star restaurants. Today, his star shines over Brussels, with seasonal favorites like Wild Mushrooms in October and delicious Foie Gras in November. In fact, the entire menu is seasonal, but there is always a wonderful assortment of meat and fish dishes available.
