It is worth straying a few quick blocks from the bustle of Chinatown's epicenter to get to the Evergreen, a pleasant eatery that avoids the cliched dragon-and-phoenix décor of most Chinese restaurants. This is a comfortable family restaurant that carries a touch of class. All your favorites are tasty and served steaming hot, like comfort food should be. But what makes the Evergreen a real find is its many dishes that are excitingly different, yet still accessible. Try the lightly fried spice-salt soft-shelled crabs, the steamed pork with Chinese mustard greens and the revolving array of simply prepared fresh Chinese vegetables that burst with flavor.

Basic fare and some specialties top the list. Noodles loaded with veggies, seafood, chicken, pork or beef seem to overflow on every table. The shrimp dumpling soup is noteworthy. Your wallet will not suffer here; prices are very reasonable ($15-25). Extremely courteous and friendly servers circulate at lunch and dinner, and specialty drinks complete your meal.

Relax in this simple, elegant place, with private booths and red lanterns, offering an excellent variety of classic cooking. The dim dum offerings are fresh and cooked to order. Try any of the overstuffed dumplings, plump and oozing. The fresh pork buns cannot be beat. Traditional dishes are also available - everything from wonton soup to sweet and sour pork. Portions are large enough to be shared. Enjoy a satisfying lunch for under $10 and dinner for under $15. Service is cordial and very helpful.

One of the more recent additions to Chinatown, Penang features Southeast Asian culinary delicacies from Malaysia, Thailand and Indonesia, among others. Dining here is a delicious adventure, and the staff is always eager to make recommendations: spicy coconut-bas ed beef rendang, sea bass baked in banana leaves, a yam pot filled with stir-fried morsels of meat and vegetable. The appetizers are equally tantalizing, especially skewers of charcoal-grilled satay and crisp-fried roti canai served with curry dipping sau ce. Entrees range from $10-$15.

With holding tanks of live lobsters and crabs - and a menu featuring two pages of underwater specialties - you are in for a treat. And diners take heed: if it SAYS spicy, it MEANS spicy. The prices are modest.
