Hamburg, "the gateway to the world", boasts a plentiful variety of international cuisine which is available at almost any time of the day or night. Yet despite so much foreign influence, Hamburg still offers its own unique local cuisine which visitors should try when here.

Focus on Freshness

Traditional north German dishes don't generally win many prizes in gourmet magazines, and sceptics and first-time visitors can get unnerved when they hear about dishes like Birnen, Bohnen und Speck (pears, green beans and bacon), Aalsuppe (eel soup) or Labskaus (fish and meat stew). However, Hamburg's local specialities often a refreshing charge of taste. They are based on the same fresh ingredients which the surrounding countryside has provided for centuries. Most traditional dishes are seasonal, no-frills affairs, and reflect north German simplicity mixed with a touch of the Danish love for all things sweet.

Fish

This seaside city's staple ingredients is fish. Late spring is the perfect time for Maischolle (spring plaice), which can be found in hundreds of restaurants and snack bars all over the city. Finkenwerder Ewerscholle (fresh plaice fried in bacon and served with boiled potatoes and a side salad with a sweet cream and lemon dressing) is a speciality best tried in sophisticated fish restaurants like Fischereihafen Restaurant, Deichgraf, Alt Hamburger Aalspeicher and Stock's Fischrestaurant. A popular summer speciality is 'Matjes' (herring) served with green beans and bacon, while a prawn sandwich makes a good snack between meals.

Local Specialties

Aalsuppe (meaning 'eel soup') doesn't actually have any eel in it: the name comes from the north German word for 'everything', meaning that the soup consists of all kinds of summer vegetables, as well as ham and sweet prunes. Another late summer speciality is Birnen, Bohnen und Speck, a stew based upon a particular variety of pear which ripens in August. All this lovely fruit comes from Altes Land, a giant orchard in the south-west of the city. Labskaus was 'created' by fishermen in the Middle Ages, and is a wonderful illustration of the proverb "necessity is the mother of invention". In the days before refrigerators, fishermen could take only salted meat with them on their long voyages, and they made it edible by boiling it into a thick broth with potatoes and onions. Mashed together with a herring, some beetroot and a pickled cucumber, the result looks slightly strange, but is extremely tasty. Try it out at places like the Old Commercial Room or Zum alten Senator.

Traditional German Fare

Hamburg has a fine choice of restaurants which offer seasonal German fare, such as asparagus in the late spring / early summer, and smoked pork, sausages and fried potatoes in the winter. The dishes on offer at places like Ahrberg or Markgraf are a fine mix of creative and traditional. For typical Bavarian fare, head to Franziskaner; to Stocker for some first class Austrian and to Zur Schlachterbörse for a large, no-frills steak. 'Neue deutsche Küche', the German equivalent of nouvelle cuisine, is best tried in modern establishments like Anna, Allegria and Bit am Jungfernstieg.

Go Gourmet

The city also boasts a number of top chefs and exclusive gourmet restaurants such as Wollenberg, Michael Weißenbruch's A table and Hans-Peter Engel's Haerlin in the Hotel Vier Jahreszeiten. Fine hotel restaurants include Hotel am Holstenwall and the Prem. If you want enjoy a view of the river while dining in style, then you're well catered for by upmarket establishments such as Landhaus Dill, Landhaus Scherrer, Sagebiel's Fährhaus and Hotel Louis C. Jacob. Restaurant Engel in Teufelsbrück has a wonderful terrace - perfect for dining on a balmy summer evening. The range of international cuisine is enormous and is too varied to go into great detail. Medded, for example, is a top address for Egyptian specialities. Vegetarians should head for Laska's, Tassajara in Eppendorf or Suryel in Altona. Mr Green's restaurant chain also offers great veggie food at reasonable prices.

Late Night Eats

Hamburg has a large choice of restaurants which are open late: Arkadasch, for example, serves up Turkish delights until 2am, Bar Hamburg specialises in fine fish and meat dishes, Bolero is great for tacos and fajitas, while Max&Consorten is a good bet for late-night croques. Numerous garden restaurants offer visitors the opportunity to dine outside in the summer. Places like Röperhof in Othmarschen, Landhaus Walter in the Stadtpark, or Café Schöne Aussichten in Planten un Blomen park are particularly pretty. If you are looking for something different, try the rotating restaurant at the top of the TV Tower, or chug along the river in the Louisiana steamboat's gourmet restaurant.

Cafes

Hamburg abounds with cafés where you can enjoy a big breakfast or pop by for a cup of coffee and a slice of cake in the afternoon. Each district has its own particular favourites: Witthüs Teestuben and Strandcafé in Blankenese, Schotthorst in Eimsbüttel, Café Lindtner in Eppendorf, Café Fees near the Holstenwall, Café Unter den Linden in the Schanzenviertel, Destille in St.Georg and September in St.Pauli. Otherwise, head for Grindelallee, a street near the university which is heaving with cafés.

Local Brews

If you prefer a liquid diet, Hamburg is definitely the place for you! The beer situation is particularly good, as there are several local breweries, many of which have been brewing beer since the Middle Ages. Visitors can take guided tours through the Bavaria-St.Pauli brewery and the Holsten brewery; drinks included, of course! Otherwise, you can pull your own pints at Brauhaus Johann Albrecht or enjoy a glass of Weißbier and barbecue your own sausages at Brauhaus Hanseat.

Nightlife

The large variety of different bars and pubs means there is something for everyone. The Reeperbahn in the red-light district is the hotspot for the younger generation. Happening places include Amphore, Blauer Peter IV, The Chinese Mandarin Lounge, Meanie Bar and Roschinsky's. The Schanzenviertel is home to countless atmospheric little pubs, the smallest of which is Kurhaus. You could also try places like Schilleroper, Saal II and Bar Rossi. A firm favourite in multicultural St.Georg is Max&Consorten, but Gnosa has become equally popular, especially among the gay and lesbian crowd. The district of Eimsbüttel is well served by R&B, Meisenfrei and Maybach. There are also plenty of cocktail bars in town, the most stylish of which are Ciu's, Bar Hamburg, Cairos and Havanna.

Wine Cellar’s

Wine connoisseurs will be in their element at Allegria or Schwender's, with a choice of over twenty open wines which you can enjoy on the outdoor terrace in the summer. Cremon's wine vault in the old town is full of old-world atmosphere, while Weinlokal Schoppenhauer serves up great meals accompanied by fine wines in a warehouse just around the corner. Another excellent wine selection is available at Zur Traube in Ottensen, an 80-year-old establishment located in a beautiful listed building. If you fancy a bit of 'DIY wine', then head to Lemitz Weinstuben (in Eimsbüttel) in the autumn, where you can help harvest the grapes and see how wine is fermented.

You'll be able to eat high quality and luxurious morsels here, such as caviar and oysters. Non-fish dishes are also available; this place has a very creative kitchen! All this immediately makes up for any dissatisfaction you may feel about the crowded restaurant or the occasionally rushed staff. The little basement restaurant is located in a corner building. It is pleasantly lit, and despite the extravaganza and odd hectic moment, the atmosphere is mostly comfortable and relaxed.

Located directly on the Strandweg in Blankenese, the Ahrberg has a great view of the river Elbe. It is an exquisite spot for a high-class meal either before or after a walk along the Elbe. The Ahrberg belongs to the upper price category restaurants. A visit is a bit like travelling back in time to the days of teak, gramophones and wall clocks. Mixed customers enjoy their visit here among lots of stylish antiques and old-fashioned decoration. In good weather, you can dine outside or on one of the three sheltered terraces. There is traditional Hanseatic cuisine, especially for fans of fish dishes and so called 'plain cooking', but the menu also offers a fine choice of international dishes.

The Allegria offers modern international cuisine, and shares its premises with the Komödie at Winterhuder Fährhaus. This restaurant in Hamburg's beautiful Old Town offers traditional high-class fish cuisine. Despite the name, they have far more to offer than the 11 eel variations which gave the place its name. The Aalspeicher is decorated with a lot of typical Hanseatic accessories. If you want to dine with a view of the canal, it is advisable to book a table in advance. Plaice, herring, salmon and other classic fish dishes are also available here, while steaks and seasonal dishes complete the menu, along with a wine list which caters for everybody's needs.

Located near the harbour, Amphore is an idyllic spot in the middle of the city, offering spectacular views of the River Elbe and the shipyards. The place attracts a mix of trendy young regulars, often clad in expensive clothes, Ray Bans and carrying mobile phones. But plenty of other people pop by during the day for a cup of coffee, a quick read through the daily papers and to enjoy the view. A flight of stairs leads down to the Golden Pudel Club.

The Turkish restaurant Arkadasch faces the university campus. It is equally popular amongst students and older regulars. Friendly service and cosy seating areas with wooden chairs and benches in the basement make for a pleasant visit. In the summer, when the Arkadasch becomes a street cafe as well, you can also dine outside. There are salads, light or tasty starters and a large variety of mainly Turkish meat dishes, but also vegetarian meals like sheep's cheese or aubergines. Until late at night some meals like Kebab, meatballs and fillet of lamb are available. The Arkadasch offers a choice of international wines and Turkish spirits. There is a happy hour every day, and a good breakfast is available from 8.30am.

The Brauhaus Joh. Albrecht is a real pub, complete with barrels, beer tables, and copper kettles. It is quite cosy with an unusual ambience. The view of the Alster Canal can be described as unique, as can the two house beers: the dark Kupfer and the light Messing. This is a pleasant place in which to relax after browsing the shops and braving the bustle of the city. On their first visit, many people discover that the Brauhaus is well worth revisiting.

The charm and flair of the Schanzenviertel is concentrated here. Punks, kids, intellectuals and everyday people all come to this place with its garish green walls and 50's decor. The café is actually surrounded by the lime-trees, which are the inspiration for its name. They certainly contribute to its popularity and make people want to stay that little bit longer, as do the 10 daily newspapers and the many magazines for customers to read over coffee.

If a holiday abroad is out of the question, a visit to the Cairos is a good antidote for that travel bug. With an unusual Oriental flair, this is certainly no run-of-the-mill watering hole. The Cairos is thoughtfully furnished to create an exotic ambiance. Even the menu and beverages are rather out of the ordinary. In addition to a choice of cocktails and long drinks, Cuban cigars and snacks such as nachos and sandwiches are served at moderate prices. As if that's not enough, the glass case with a mummy inside is another interesting feature.

This exclusive location is the perfect place to sit back, light up a cigar, and savour a cocktail or a glass of whisky. This is a bar of superlatives; even if you ignore the praise lavished upon it by the owner and staff, it's still difficult to find things to criticise. With leather sofas, black marble, colourful paintings, expensive mirrors and a wonderful view of the Inner Alster, the ambience is wonderful, as is the service. The prices are a different matter, but even they are justified.

There are high-class fish courses on the menu, including classic German plaice, eel delicacies and lovely plain cooking. There are also meat dishes to choose from, and a choice of light meals as well as traditional desserts like red fruit pudding.

The Destille is a very nice cafe and restaurant at the Museum of Art and Commerce. It's not far to walk from the main railway station. There is a bright and friendly atmosphere at the Destille. The interior is very original - there are tables with marble tops and old iron sewing machines as bases. The walls are decorated with little pictures and objects. Apart from cake and beverages, there are delicious little hot and cold meals available. It's as nice to sit here with just a glass of wine as it is to have a big breakfast at the buffet. Bread, rolls, butter, eggs, spreads, cheeses and meats are individually priced.

The lovely restaurant can be found in the exotic winter garden of the Museum of Hamburg's History. The unusual ambience alone makes it worth a visit. Not just museum visitors enjoy a nice cup of tea or coffee and some cake here. You can sit at little tables under a vaulted glass ceiling surrounded by palm trees and other large plants. It is almost like being in an arbour. In summer the terrace is also open to guests. On Sundays you can get a brunch at the Fees for (EUR 14) with hot drinks included. À la carte breakfast is also available from approx. (EUR 5-8.50) and the cakes are also highly recommended.

Inconspicuously situated between two warehouses and close to the fish market and ferry terminal for boats to England, this establishment, which is run by the Kowalke family, attracts gourmets from far and wide, including many celebrities. Both traditional and exotic fish and seafood dishes are available, as is a fine choice of wines. The window seats offer great views of the River Elbe. A three course set menu is available at lunchtimes.

If you've had enough of the allegedly stiff and formal Hanseatic people, and feel you could do with proper Bavarian food and ambience for a change, why not try the Franziskaner. The waitresses wear traditional Dirndl dresses and the interior is very impressively decorated in authentic Bavarian style. There are rumours that real Bavarian guests sometimes spontaneously start singing folk songs at the bar. Rich and tasty meals like roast pork and veal sausage with pickled cabbage, pretzels and dumplings are on the menu here. They can be washed down with the typical Maß (1 litre) of real Bavarian beer - even in Hamburg!

The Havanna, in the fish market, serves the best cocktails from all over the world; more than one hundred different varieties are mixed here! They are prepared by professional barmen, effortlessly tossing ice cubes into the air and managing to catch everything they have thrown-these chaps really seem to enjoy their job. You could almost be in the Caribbean-palm trees and bamboo canes are part of the interior. The regular crowd of good-looking, cheerful people always appreciate the colourful decorations on their drinks and the consistently friendly service. The staff stay calm even during the busiest of evenings.

Admittedly, it holds but a handful of people and on weekend and during the summer months the crowd can get so large that the pub takes over the whole pavement outside. The name (meaning 'house of cure') might not be taken too literally at night, but on sunny afternoons it is a great place for a cup of coffee and is the perfect antidote for work stress. To keep the decor interesting, the room is regularly redesigned and given a new lick of paint.

This restaurant is not located in the city centre, but as Swabian and Bavarian cuisine and specialties from Baden are a bit exotic for Hamburg standards, it is well worth the short journey. A closer look at the menu also reveals a choice of Alsatian dishes. The Markgraf is located in an historical building with a very beautiful old stained glass door, which separates two of the dining rooms. It used to belong to Eppendorf monastery. Complimentary goats cheese and a platter of tempting starters provide a sample of the culinary treats on offer here. The mains include game and corn fed chicken dishes, which are very nice and very filling.

Since the Meanie Bar is attached to the popular Molotow Bar (downstairs), the orange wallpaper and pink lampshades seem strangely fitting. This is a good place to stop if you are on a pub crawl along the Reeperbahn.

"Welcome on board" should actually be the first words spoken upon entering the place. A combination of mahogany wood, brass lamps and ship's accessories create a cosy maritime atmosphere. Above all else, Labskaus is a firm favourite and also a visual experience for newcomers here. Among other classic dishes, Pears, beans and bacon is highly recommended.

The "Old Country" is located southwest of Hamburg and its "capital" Jork can still easily be reached by public transport. The old marshland was dyked and made fertile as early as in the 12th Century. Today, quality products from this fruit and vegetable paradise are delivered to places far beyond the greater Hamburg area. A good time for trips is late spring when the seemingly endless orchards are in full bloom and then again during the harvest season. On the first weekend in May there is a "blossom-festival" in Jork, including a parade with the new "Fruit Blossom Queen". In winter a form of curling on the orchard paths is a popular hobby around here-of course you need some fruit wine to keep warm.

The name 'Planten un Blomen' has its origins in the old Hamburg dialect for 'plants and flowers'. With a huge variety of trees, plants, flowers and a Japanese garden, the park attracts thousands of visitors during the warm summer months. One of the major summertime attractions is the water-music and light show. This impressive spectacle takes place at 10p from May to August and at 9p throughout September. The water-music is performed every day in winter, but without the light show. There is also an adventure playground and numerous other children's activities.

This is a nice place for a drink, especially when DJs are playing electronic music, which is frequently the case. At the weekend the pub can be packed before 10p and also on weekdays this bar is a good one to meet your friends at and have a pleasant chat. The crowd mainly consists of trendy twenty somethings.On Sundays they sometimes have flea markets here (that´s how they choose new furniture for the interior).
