This seafood restaurant, named after its chef, is located within the Bellagio Las Vegas hotel. It is popular both among critics and the public due to its innovative cuisine. The prices are a trifle hefty, but the taste more than makes up for that. Try the Tartare of Ahi Tuna, Lobster Pot Pie and Mussel Souffle, which are highly recommended; the cocktails deserve a special mention too.
