Restaurant Sauterelle at the Royal Exchange Courtyard offers French food bourgeois-style. "Sauterelle" translates as "grasshopper", but you needn't be worried about finding them on the seasonal menu—what you can expect are honest-to-goodness peasant preparations. Goose rillettes, Saucisson Lyonnais, lobster bisque, and braised rabbit with tarragon are all specialties here, and Head Chef Darren Kerley cooks them to perfection. A fine wine to compliment your meal, and voila—here is fine dining at its best!
