Pure Andalusian olive oil and sherry are the two favoured staples in this kitchen. They're used profusely to help create delicately flavoured Mediterranean masterpieces. The house speciality is cod prepared in a number of different ways. Other excellent dishes include lobster salad with fine herbs, foie gras with sherry and berries and marinated sardines with tarragon. The desserts are just as inventive. Try the Sherry Fig Cake or Apple Pie with Leche Frita (fried milk pudding) and Orange Sauce. As for the wines, they're mainly examples from Rioja (Bernia 86) and Ribera del Duero (Hacienda Monasterio, Viña Mayor), without forgetting the rich Amontillados and pale Finos from Jerez.
