Walk in here and you'll find yourself transported to a typical bar in southern Spain with its wrought-iron bars on the windows, ceramic tiles, legs of cured ham and bottles of sherry on the counter. The kitchen serves up pure Andalusian specialities like rice soup, oxtail stew and fried Mediterranean fish. There are four branches in total.

High-flying Basque cuisine
Calle del Comandante Zorita 37
Madrid, Madrid 28020
Spain
+34 91 533 0185
All the best Basque traditions are maintained in this light, airy and spacious restaurant. That includes the attractive rustic decor of exposed wooden ceiling beams, woollen rugs on the floor, and paintings of Basque landscapes on the walls. As for the food, it is simply outstanding. The house speciality is chipirones encebollados (baby squid with sweetened onions). The wines are as rich and delicious as the food: Marqués de Arienzo y Ondarre from Rioja is the house red and Mantel Blanco from Rueda is the house white. Try the homemade pacharán (Blueberry liqueur) as a digestif. It is a popular place with successful executives.

More than just traditional Basque gastronomy, Goizeko Wellington is a mixture of good tastes, colors and the "savoir fair" of chef Jesús Santos who expertly creates new dishes based on traditional recipes. The restaurant, born from the union of this master of Basque cuisine and the Hotel Wellington in which it is located, is elegant (formal dress required) and peaceful. Its environment is perfect to concentrate on a good conversation while enjoying their exquisite dishes: raw oyster salads or low-temperature turbot with wild mushrooms, together with their long and select list of wines. -Angeles Fernandez

This old small palace is the site of the Opera Foundation of Navarra and Madrid and has been offering typical gastronomic dishes from Navarra since February 2000. However, the real charm of this well-known restaurant takes place during dinnertime, when the pianist offers the initial chord and all the waiters that were offering different dishes to the clients, start singing opera! It has a charming and romantic environment with a very good price-quality relation- taking into account the great opera spectacle offered. Spain's most earthy and interesting peasant recipes undoubtedly come from Bierzo in the northern province of León and that's what you get here. The traditional soups will warm your bones, especially on cold winter nights. The cecina (smoked beef) and the delicious tortilla berciana (red pepper omelette) are wholesome, hearty and healthy. What's more, the prices are reasonable. If you can't make it to León, try this place. You won't be disappointed. It's a simple tavern decorated in rustic style with lots of wood, strings of garlic hanging from the walls and shelves full of bottles. The atmosphere is always lively and good humoured.

A bullfighting restaurant that was a favourite haunt of Ernest Hemingway, it serves excellent oxtail stew, croquettes, Madrid-style tripe and black pudding. Strangely enough though, despite the down-on-the-ranch atmosphere, the house speciality is fresh hake, battered and deep-fried. Everything is prepared with old-fashioned care and attention and you can tell the difference. The most popular wines on their list are from Rioja (Marqués de Riscal and Viña Salceda) and Valdepeñas (Luis Mejía).
