One of several restaurants situated within the Ruby Foo's Hotel complex, this sushi bar has become a local favorite. Chef Yama specializes in unique Maki rolls: the Nagano-2000 roll has fish tempura, masago and spicy sauce. The more adventurous might try the Pizza Sushi: a selection of fish with tempura and spicy sauce on rice and nori.
