Your meal is served on large, flat, round bread. This is a staple of the Ethiopian culture and is much like sourdough. The bread is topped with an assortment of fresh vegetables (the Ethiopian diet consists mostly of vegetables and cheese). Small bowls of sauces and spices are brought to your table for dipping. Don't look for utensils, because Ethiopian chow is eaten without fork or knife.
