Sant Ambroeus' liberal use of raw beef and cold veal is a strong indication that this is not your average Italian restaurant. Here, the emphasis is on tradition and simplicity. Choose from a number of delicate salads of fresh greens and specialty veggies. Serious carnivores will delight in the house-made carpaccios of raw beef or tuna. The panini sandwiches are also made with intruiging vegetable options and exotic meat preparations. Pasta selections are not drowned in too-rich, too-thick sauces (the Linguine features only garlic, red pepper and oil). The risottos are legendary (the Seafood version comes chock full of shrimp, calamari, scallops, clams, and King Crab). Entrees include rustic takes on veal, steak, lamb chops, and mediterranean Sea Bass. Brunch, lunch, dinner, dessert, and Afternoon Tea are offered, and all menus include recommended wine pairings.
