Just about everyone's heard of salade niçoise, a salad made of fresh tomatoes, mixed leaves, anchovies, tuna, beans and olive oil...but it is only the tip of the iceberg in the realms of regional specialities in Nice. The local cuisine has developed in accordance with the Mediterranean climate, to produce a light style of cooking based mainly around fish and vegetables. In addition to the eateries offering regional dishes, Nice boasts a dizzying number of restaurants serving traditional French gastronomy, seafood specialities, as well as cuisine from other countries. If quenching your thirst is your priority, choose one of the welcoming taverns in the old town or the delightful sun-drenched café terraces...make sure not to forget the ice cream parlours.

Nice Cuisine

A visit to the French Riviera really wouldn't be complete without sampling la socca – a delicious savoury pancake made from chick peas. Other distinctive dishes include les petits farcis or stuffed vegetable parcels, morue à la niçoise – cod cooked with tomato and olives, pissaladière, which is rather like a pizza but made with onion instead of tomato, fleurs de courgette cuisinées – cooked baby courgettes, raviolis and pan-bagnat – Nice's twist on the sandwich using two round slices of bread soaked in olive oil enveloping a miniature salade niçoise. You can discover the flavours behind these mysterious names at the "home of Nice cuisine," Helene Barale. Chez Simon and Au Rendez-vous des Amis, which overlook the city, are also worth a visit. For a simpler yet equally delicious bite, check out Pipo Socca or Chez René. Lou Chicou is the first fast-food restaurant serving Nice cuisine, located on the fabulous Cours Saleya – an ever-lively pedestrianized district buzzing with open-air market stalls and café terraces. But wherever you may wander, you're sure to happen upon many other little restaurants specialising in regional dishes, as they're nestled all over town.

Traditional French Cuisine

Fans of traditional French cuisine are truly spoilt for choice in Nice. Places to try include Diva, L'Horloge and Don Camillo. These centrally located restaurants offer excellent dining à la carte and set menus – perfect for quality food in a pleasant, contemporary setting. Slightly off the beaten track, the beautiful vaulted cellar of Baud et Millet offers cheese-based dishes accompanied by fine wines.

Fit for a King (or Queen)

For a high-class meal there are two restaurants in town that should not be overlooked. The prestigious reputation of the Chantecler is well deserved. As the restaurant of palatial hotel, the Négresco, it comes as no surprise that the dishes and service are fit for a king. Nice's other grand hotel, the Maeterlinck, boasts a similarly exceptional restaurant called the Mélisande, looking out to sea. The menus in both establishments are regularly updated along the lines of lamb cutlet with mozzarella and aubergine, filet of sole and foie gras with fresh pasta.

Fish & Seafood

If you fancy fish, you really should book a table at Boccaccio in the pedestrian district, or at Coco Beach just below Mont-Boron Park near the Cape of Nice. For sumptuous seafood, the Grand Café de Turin is in a class of its own.

Food from Afar

The city also caters for those with more exotic appetites. For a taste of neighbouring Italy, try Zucca Magica – an amazing vegetarian spot, or Québec, which serves wonderful pizzas and pasta that is perfectly al dente. But Nice is a town of many flavours...you can even be transported to Lebanon at Byblos.

Pubs, Cafés & Ice-Cream

If what you're after is a bit of light refreshment or a snack rather than sitting down to a full-on meal, the old town (Vieux-Nice) is positively overflowing with pubs, each one more tempting than the next. Check out De Klomp or Master Home. The sweeping terraces of L'F and the Civette du Cours cafés in Cours Saleya are also extremely popular. Famous for the Theatre en Niçois (a show enacted in the local dialect), the Bar des Oiseaux will captivate you with its vibrant local colour. And finally...a place Nice's dedicated gourmet cannot live without is Fenocchio, arguably the best ice cream parlour in town. With an endless selection of flavours, it is set amid one of the old town's charming squares – Place Rossetti, where the beautiful Cathédrale Sainte-Réparate takes pride of place.

Step inside and you will find a warm Lebanese welcome in Byblos, named for a charming Lebanese fishing village. The cuisine is varied and plentiful. If you cannot decide on what to have, take the easy way out and try the mezze, an assortment of traditional dishes: taboulé libanais (a couscous dish with parsley), kefta (meatballs flavoured with spices), houmos (chickpea purée). The décor in the two dining rooms is typically Lebanese with trompe l'oeil frescoes in shades of brown, orange and beige and a bar made of dark wood.

Chez René is self-service: diners order and help themselves at the bar, then sit down to eat at one of the large wooden tables outside. There's also a dining room inside.

It doesn't take long to figure out why this long-established ice cream shop facing Cathédrale Sainte Réparate is so popular. Its choice location certainly helps, but what really draws a crowd is the huge range of home-made ice creams: 70 different flavors are available in total. Old favorites like Café Liégeois and Peach Melba feature alongside more unusual flavors like Comté de Nice (mandarin ice cream with whipped cream, pine nuts and candied mandarins) and Négus (six different chocolate flavors).

The restaurant serves wonderful seafood all day (even at breakfast), and shellfish are always fresh. Reservations are not accepted, and the café is often full by 7p, so be sure to arrive early. Specialties of the house include Scampi Salad with roasted asparagus and parmesan, and a Sea Bream Socca with vegetables. Four-course menus begin at around EUR30.

While the location is a bit remote, this hotel is a peaceful paradise between sea and sky!

This Scottish pub features cozy wood paneling and a remarkable centerpiece of a painting consisting of four Scots clad in mini-kilts. It is located in a bustling pedestrian zone in Vieux-Nice, just next to the Place du Palais-de-Justice and the Cours Saleya. In addition to the huge choice of beer (30 brews) and whiskeys, Master Home also has a cyber-café. There are popular theme nights every week, including disco, Scandinavia, cowboys and more. Mont Boron is one of the many hills bordering the city of Nice. Stretching out above the port, it is a favorite walking spot for families and nature enthusiasts. Dating back to 1860, this forest features vegetation native to the Mediterranean, such as the Aleppo pine and the Holm oak. When you reach the heights, stop a while to take in the beautiful panorama over Nice and the surrounding bay. With 11km of signposted footpaths, it is the perfect place enjoying the fresh air while hiking or mountain biking. Don't miss the nearby fort on Mont Alban - a magnificent example of 16th-century military architecture.

If you fancy trying some regional specialties, order the specialty at Chez Pipo called socca (a kind of soft crêpe made from chickpea flour). It has been called the best socca in Nice; never too greasy, and fresh from the oven. Wine is available by the glass and there is a good home-made Tiramisu that is worth saving room for. Unfortunately, the restaurant does not take reservations so it is a good idea to get here early and beat the crowds, or be prepared to wait!

Several narrow, winding little streets open out into this square, which appears like an oasis of light from the labyrinth of shady streets and old, leaning buildings. The city's baroque Cathédrale Sainte Réparate has a place of pride here. Adding to the square's authentic character is the gray stonework, complemented by a small, charming fountain made of white stone. It's also here that you can taste the city's best ice cream at Glacier Fenocchio. A rather steep climb up Rue Rossetti will take you directly to the Parc du Château.

This restaurant, located in one of the city's busiest shopping districts, promises great pizza no matter what time of day. Service is non-stop and there are dining areas both inside and outside on the huge terrace. However, if you are looking for somewhere intimate, forget it! Dining here may be a bit of a squeeze, but it hasn't stopped the likes of actor Johnny Depp and opera singer Ruggero Raimondi from dropping in. In addition to pizzas, the restaurant serves regional and Italian dishes (not quite what you would expect, given the Canadian name), including ravioli, fresh pasta carbonara and fried squid.
