This four-star restaurant in the heart of Montmartre is named after Antoine Beauvilliers (1754-1817), the kitchen head of the Count of Provence (Louis XVIII). He invented the word "restaurant" and contributed to its being spread to the common people. This dining place is more of a culinary home than a restaurant with its bouquets, its bright colours, and its 18th-century atmosphere. Recommended dishes by founder Edouard Carlier are the fresh Artichoke Heart with Crab, the Fried Squid and Seafood in Tuscany Olive Oil (appetiser), the Veal Kidney in Veal Shell and Veal Fillet and for dessert the Crunchy Black and White Chocolate Cake with nuts.
