Hip interior designer Andrée Putman has definitely left her minimalist mark on this high-tech sushi bar. As in Japan, sushi is prepared by chefs while you wait, and then dispatched on a huge conveyor belt around which diners are seated. The menu helps to identify which dish is which, while the plates' pretty color scheme indicates price.
