When you enter this dining spot you will see a 30-foot waterfall. The dining area is jade and fuchsia with a splash of royal blue. The walls are decorated with copper. Dim sum translates to "touch your heart", and this restaurant's dim sum has earned a local reputation of living up to that promise. It has the best pot stickers in town, along with steamed port and shrimp dishes. If dim sum is not your thing, the regular menu features items like XO Sauce with Jelly Fish and Oysters, and Bean Curd. The big Buddha statue and gurgling fish fountain appeal to kids, but its blend of traditional Chinese and Polynesian dishes is the calling card. A favorite is the Seafood Bird Nest, a combination of prawns, calamari, scallops and mixed vegetables assembled in the shape of a bird's nest. The Cashew Chicken is another star on the menu. An interesting twist on its tradition is the "Empress Fitness" menu featuring entrees prepared without cornstarch. There are no surprises here. The appetizers include egg rolls, pot stickers, fried won ton and egg flower soup among many others. Beef, fowl and seafood dishes are all well represented. The bird's-nest selections are a Szechuan variation on the dishes that are served in edible containers. As for Egg Foo Young, the varieties range from shrimp to crab to pork.
