It was during the Gold Rush that French immigrant and bread maker Isadore Boudin first hit on his recipe for sourdough bread that earned him a place in San Francisco history. The baking method hasn't changed in all that time. Other sourdough bakeries have come and some have gone, but for many native San Franciscans, this is the only sourdough that matters. The company expanded into the restaurant business a few years back where, in a casual setting, you can get either good clam chowder or a huge salad in a bowl made from their signature sourdough.
