There are more different kinds of the pricey roe here than almost anywhere else in The City. The owners Mats and Dafne Engstrom do not just import the stuff, they have their own aqua farm outside Sacramento California, which means that you will find some of the freshest caviar to be savored - whitefish, trout, salmon! The Tsar Nicoulai Caviar Café is widely sought by caviar connoisseurs. But prior to reaching the cafe racks, thorough quality controls are practised right from raising the sturgeon to processing its roe.
