It's 5pm and Chef William Belickis is still working on the evening's menu. The lack of structure is by design. The chef chats with arriving diners and decides what's cooking. He provides a "spa" dining experience, relying on spontaneity and fresh ingredients to create refined, custom made meals. The restaurant's interior is not so spontaneous. The linen, china, walls and almost everything else are white. Instead of feeling stark, the contemporary, crisp room is almost calming.
