Sydney Harbour Seaplanes will take you just about anywhere you want to go. Choose from secluded beaches, silver-service harbourside restaurants, five-star waterfront hotels, or just go for a spin over the city. For a gentler form of air travel, take an early morning balloon ride above the city, Camden Valley or Hunter Valley with Cloud 9 Balloon Flights; champagne breakfast is included. If the sea is more your style, then the tall timber masts and white sails of the Bounty are a faithful recreation of Captain Bligh's historic ship; and lunch and dinner cruises are available. Also, the Great Australian Pub Crawl is a fun tour that comes with a twist—a helicopter and designated pilot. So, sink a quiet schooner or two, before flying to the next pub.

Take a good look at a map of the peninsula between Avalon, Palm Beach and up to Barrenjoey Head, then get your motor running on the back of a Harley with Easy Rider Motorbike Tours. Or if you want something romantic, the islands of Sydney harbour are the ultimate spot. Most of the islands, including Shark Island, which is the biggest, are accessible from 9a-6p (8p in summer), but you will need to arrange your own water taxi, chartered ferry or private yacht. Guided tours are also available for other islands, including Goat Island.

It took Phileas Fogg 80 days to go around the world, but you can see magnificent views of either Sydney city, Camden Valley or the Hunter Valley region in less than 80 minutes, followed by an après-flight champagne breakfast.

If you were born to be wild, or if you just want to see Sydney from the back of a Harley Davidson, this is an unforgettable experience. Tours range from a quick 15 minutes Rocks Rumble, to hitting the open road on full-day trips, cruising the highways and byways of some of the most stunning countryside in NSW. Travelling by helicopter, this is a grand tour, buzzing over the city, then north along spectacular coastline to the first port of call, the Wollombi Valley Pub. Here, for the brave hearted, awaits the famed Dr Jurd's Jungle Juice...port, brandy and unknown substances. Then, it is on to the Polkobin Estate, one of country's premier wine-makers. A selection of Australian wine and modern Australian cuisine are served in Cafe Max, before it is up, up and away to the Settler's Arms in St Albans. Check website for more information.

Owned by the National Parks and Wildlife Service, this patch of land is like a floating park, covered in seagulls, a couple of picnic shelters and a few big boulders. The best thing about it is the fact that you can picnic here or hire it exclusively for a party for no more than 500 people. Of course there is also the position. Slap bang in the middle of one of the world's most beautiful harbors. Bookings essential.
