One of the most famous agricultural tourism sites in the province. |

Gruden is one of the most famous holiday farmhouses in the province. On the Carsican plain, behind the city, it offers excellent grilled veal and pork and large plates of gnocchi and yota (a typically local soup only for strong stomachs). But the real specialities are the delicious goats cheeses, made locally, with very tasty cured meats (prosciutto and salami). The wine is excellent, and is again of local origin. The traditions of the 'pancogole' and home-made bread. |

This is a small, traditional area on the city outskirts which has become part of the even smaller history of Italian breadmaking. In fact it was here, in the last century, that the traditions of the legendary pancogole began, with young and old women alike coming down onto the streets of Trieste to sell large loaves that have been cooked a few hours earlier within their own four walls. Today, of course, the 'pancogole', (a dialectal term that might loosely be translated as 'bakers' although this is not the exact meaning.) no longer exist, but respecting traditions, il Britannia, a delicious restaurant has stood here, in the heart of Servola since 1986. In actual fact this restaurant bakes it own, very healthy, bread in house. The menu, which is displayed in 5 languages, is based on meat dishes, (there is pasta al ragù di puledro or the excellent pasta squares.) and there is a decent wine list, with mostly Friulian labels. The atmosphere is quiet and peaceful, with a friendly ambiance. There is seating for 50 inside and another forty on the beautiful floral terrace. The restaurant is also featured in the Academy Guide to Italian Cuisine. This is one of the city's marvels, a temple of gastronomy, a monument, a point of reference: it would be a sin not to eat here if you are in Trieste. The atmosphere is refined, the service praiseworthy. Inside, there is seating for more than 100, and more in the garden. The cuisine is central European with local and modern influences. Among the favorites are the truffle fondue, veal shank, ham in pastry, and the Risotto alle Erbe del Carso. Among the desserts, the Semifreddo di Papa and the chocolate soufflé are sensational. Near the Slovenian border, on the edge of a small, yet important commercial town, Opicina, this place offers a mainly fish menu. It is therefore an untraditional place in this region of mainly meat restaurants, yet it is a quality place, serving the best specialities from Istria, the extraordinary Croatian peninsula. Try the fish with potato dumplings or a variety of seafood which is always extremely fresh. There is also a choice of meat. In summer, visitors can sit in the small, but welcoming garden. In the main area of Carso, near the historic Opicina train that links the city to the upland plain. One of the most famous restaurants in the area, it was opened in 1903, this is a cross between high class and typical Carso atmosphere. Tradition is accompanied by excellent, quick service in a well looked after, light atmosphere. There is also a chance to sit in the lovely garden. There is vast choice of starters and main courses including unusual meats, soup with beans, potatoes and pork, boiled tongue, frogs, roe deer, polenta with brain, fried chicken, mushrooms, truffles and pig's shin. Scarpon's interior is typical trattoria, but don't let that put you off—the food is so good that it is always full to bursting point. The cuisine is traditional to the area—both meat and fish—spaghetti with sole, gnocchi with goulash and jota, and all the local dishes. Scarpon is a few steps away from Via XX Settembre, the street of the Rossetti Theatre and all the best cinemas. The chef, Claudio Scarpa, always has thousands of stories and adventures to tell and although the service may be a bit inaccurate and lax, his cooking is definitely worth trying. It will hopefully go on for another hundred years at least, as it is adored at Carso for it's homecooking and is a favourite with the people of Trieste. This is the place to enjoy abundant dishes, great flavors and healthy cooking. Max, in the heart of Opicina, offers local food, such as bread dumplings with roe deer, potato dumplings with plums and roasted meat. Sophisticated but welcoming atmosphere and reasonable prices. Good service and a good choice of local wines. Max is also near the tramway, a historic mode of transport that links Trieste to the high plains. In this large building, which is only a few hundred meters from the Pesek pass (on the Italy-Slovenia border) you will be offered a rich menu of typically local dishes. The restaurant, which is one of the more popular for parties, banquets and ceremonies, (it seats over 150 indoors and has a large garden) combines rustic traditions with a refined and modern cuisine. In short, if you do not want to have dinner in a farmhouse nor in a city center classy restaurant this could be a good solution. Drinking Terrano the red, mellow, local wine (although there is a good selection of other labels), you might like to try the beef tagliatelle with rocket (which is the house specialty), pork shank, tortelloni with smoked ricotta, gnocchi with bacon, duck with blueberry, guinea fowl breast or an excellent carpaccio, prepared with imagination. Please note: for those who do not like large spaces, there is also a smaller, more intimate room. No problems with parking and prices are very good. This refuge is located at the entrance to Val Rosandra, in one of the most unusual and evocative corners of the Carso Triestino, on the left-hand bank of the stream. The local environment is very particular to this area - the vegetation, the rocky walls, and the caves evoke an alpine landscape, but it is only 80 metres above sea level. The Premuda is the lowest Italian mountain refuge. It was opened by the Società Alpina delle Giulie in 1940, and is the base for the "Emilio Comici" National Alpinism School, as well as being and ideal base for excursions into the valley. It is only 20-30 minutes outside the city (to get there just go towards Muggia and then follow the signs to Val Rosandra), but it is immersed in a sort of natural paradise. The Premuda is a stone building with a large garden and a very big car park. It is like a typical Alpine refuge. It is very busy during the Summer when its full of cavers, climbers, naturalists, and families on holiday. It doesn't have any beds. It is also easy to reach by bus, the nearest stop is just a few hundred metres away in the village of Bagnoli. Obviously the food and drink available is nothing out of the ordinary. As in all refuges you eat simple, but tasty food. The food is mostly made up of sliced ham and cheese, but there are also a few hot dishes such as pasta, soups, and gnocchi. It is the ideal place to start your excursion from, and is in a beautiful location. The refuge is shut during the month of February. Review © 2007, Wcities |

This restaurant is located in the middle of the nearby plain, between Prosecco and Sgonico, in a really beautiful spot. It combines traditional cuisine with modern and refined cookery. Savina & Anna is warm and welcoming, and is one of the many restaurants in this area which offer game dishes, gnocchi, and other seasonal, homemade food. This type of cuisine is very popular here, and so during the weekends it can be difficult to find a place here. The restaurant has been renovated recently, and also offers some excellent desserts, such as struccolo which is puff pastry filled with stewed apples or other fruit in season. The wines are all local, and include Terrano, Refosco, and Malvasia. The restaurant is both rustic and elegant, and has a pleasant atmosphere. There is a large garden and a car park.
